Design Specification

This was a complete rip-out and re-installation of a new kitchen ventilation system, providing a varied menu at one of the areas up and coming gastro pubs.

Solution

The main kitchen ventilation canopy, extracts air flow rates in excess of 1.5m3/sec via two rear connection spigots.This is conjoined into a common duct that is extracted through an in-line centrifugal fan unit and bypasses through both system and atmosphere side silencers.

The kitchen also required a small ventilation canopy over a grill and microwave area. A small centrifugal fan unit was housed in the filter housing block, discharging directly to the rear of the canopy.

Make-up air is re-introduced to the kitchen via insulated supply air plenums on the front valence of the main extract canopy. Personal adjustable supply air nozzle diffusers are located on the underside of the canopy with the majority of the air dispersed via double deflection grilles on the vertical face of the plenum.

The cookline was fitted out with DP1 catering grade stainless steel wall cladding.
